Perfect Menu for a Spring Brunch

Lots of time when I am sitting here wondering what to write about, I think of you, dear reader. I think about what you might be struggling with or thinking about or needing help with. This past week I had several events which sparked my creativity and imagination when the topic of breakfast and brunchy things popped up.

One event was the grand opportunity to host a family with small kiddos here for the weekend, and getting to make breakfast for everyone, two times! Joy! I am super sad I have no photos from these meals. It was such fun to have little people sitting around the table again. Loved!

Out popped the blender and a frothy Orange Julius was served for our Sunday morning celebration before we dashed out the door for church. It was like a little party...

Another event was a delightful note from a dear friend who encouraged my progress on Sursee Gal with a handwritten note. ( I LOVE handwritten notes- don't you???)

She had gone onto my website to find my, ok--really Lady Di's, famous egg casserole and in doing so, saw all the other content that has been written. She wrote me a note encouraging me in my endeavors and my heart swelled. We all need a little encouragement, right?

And lastly, a friend mentioned she was hosting a brunch soon, so of course, what does Sursee Gal do, but send her a whole menu plan for a Perfect Spring Brunch.

Which leads to today. The inspiration for this is from you, reader. Here is an idea for a perfect spring or summer brunch you can serve to your family. Your outta town guests. Your Easter morning crew. Your girlfriends.

Lady Di's Egg Casserole

Pumpkin Bread

or Up and Down Biscuits

*A Berry Bowl

Bacon or Sausage

*A Berry Bowl consists of sliced strawberries, blueberries, raspberries and blackberries. Simple. Gorgeous. Tasty.

You can slice strawberries or leave whole.

Try this menu the next time you have guests and see how you like it. Or serve it to your family. They will love it.

Orange Julius

Ingredients

  • 1 small 6oz can of orange juice concentrate

  • 1 cup milk

  • 1 cup water

  • 12 ice cubes

  • 1 tsp vanilla

  • 1/2 cup sugar

Instructions

  1. Add all ingredients into a blender

  2. Blend well until ice is crushed and mixture is frothy

  3. Makes 1 blenderful

  4. Serve

  5. Make it one recipe at time so it fits into the blender
